Katy makes cheese in her own home, for her own gastronomic amusement. She doesn't own a cheese boutique or work for whoever or whatever makes Velveeta or brie. And while she didn't end up quitting law school to make cheese full-time, she has, since taping this video, quit being a lawyer to start her own online store that she calls "a distribution mechanism for the technocuddly." Not too long ago, she survived a brain tumor which explains her mandate to do whatever the hell she wants to in life. I think Katy is as punk as the cheesemakers in Brooklyn.
